Ingredients
Scale
- 1 lb raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 8 small corn or flour tortillas
- 2 cups shredded cabbage or slaw mix
- 1/4 cup chopped cilantro
- 1 avocado, sliced (optional)
- Lime wedges for serving
**For the Baja Sauce**
- 1/2 cup Greek yogurt or mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chipotle in adobo, minced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt to taste
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, cumin, paprika, garlic powder, and salt. Toss to coat and marinate for 10–15 minutes.
- Prepare the Baja sauce by mixing yogurt or mayo, lime juice, chipotle, paprika, garlic powder, and salt until smooth. Set aside.
- In a skillet over medium-high heat, cook the shrimp 2–3 minutes per side until opaque and lightly golden.
- Warm tortillas in a dry skillet or microwave until soft and pliable.
- Toss the shredded cabbage with some Baja sauce and chopped cilantro.
- Assemble tacos: place slaw at the base, add shrimp, drizzle with more Baja sauce, and top with avocado slices and lime.
- Serve immediately with extra lime wedges and any leftover sauce.
Notes
- Use Greek yogurt for a lighter Baja sauce option.
- Pre-chop slaw and mix sauce earlier in the day to save time.
- Air fry the shrimp at 400°F for 6–8 minutes for a crispier texture.
