  • 2 tablespoons olive oil

  • 1 teaspoon cumin

  • 8 small corn or flour tortillas
  • 2 cups shredded cabbage or slaw mix
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced (optional)
  • Lime wedges for serving

**For the Baja Sauce**

  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle in adobo, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt to taste

Instructions

  1. In a bowl, combine shrimp, olive oil, chili powder, cumin, paprika, garlic powder, and salt. Toss to coat and marinate for 10–15 minutes.
  2. Prepare the Baja sauce by mixing yogurt or mayo, lime juice, chipotle, paprika, garlic powder, and salt until smooth. Set aside.
  3. In a skillet over medium-high heat, cook the shrimp 2–3 minutes per side until opaque and lightly golden.
  4. Warm tortillas in a dry skillet or microwave until soft and pliable.
  5. Toss the shredded cabbage with some Baja sauce and chopped cilantro.
  6. Assemble tacos: place slaw at the base, add shrimp, drizzle with more Baja sauce, and top with avocado slices and lime.
  7. Serve immediately with extra lime wedges and any leftover sauce.
