Description

A refreshing, creamy and tropical drink made with coconut milk, pineapple juice, and a hint of lime, perfect for family gatherings or sunny afternoons.


Ingredients

Scale
  • 1 cup pineapple juice
  • 1/2 cup coconut milk
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 cup ice cubes
  • Fresh mint leaves and pineapple wedges for garnish

Instructions

  1. Add pineapple juice and coconut milk to a blender.
  2. Squeeze in fresh lime juice and add honey or maple syrup if using.
  3. Blend until smooth and creamy.
  4. Add ice cubes and blend again until chilled and frothy.
  5. Pour into serving glasses.
  6. Garnish with mint leaves and pineapple wedges.

Notes

For a thinner consistency, use coconut water instead of coconut milk.

You can prep the drink in advance and refrigerate for up to 24 hours.
