Description
This cottage cheese banana bread is ultra moist, high in protein, and easy to bake. It’s the perfect balance of sweet, creamy, and satisfying; great for breakfasts, snacks, or brunch.

- 3 ripe bananas, mashed
- 3/4 cup cottage cheese (blended smooth or left slightly chunky)
- 2 eggs
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- Mash bananas in a large mixing bowl. Blend cottage cheese and stir it into the bananas.
- Add eggs, brown sugar, and vanilla. Stir until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Fold dry ingredients into the wet mixture gently until just combined.
- Stir in any optional mix-ins like nuts or chocolate chips.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Slice and serve warm or at room temperature.
Notes
- For extra protein, use high-protein cottage cheese.
- Make it dairy-free by substituting plant-based yogurt.
- You can use half whole wheat flour for added fiber.
- This loaf freezes well, slice before freezing for easy reheating.
