Cake:
- 6 tablespoons salted butter (plus extra for greasing)
- 8 ounces semisweet chocolate, finely chopped or chocolate chips
- 6 large eggs, separated
- 1/2 cup granulated sugar
Whipped Cream Topping:
- 1 1/4 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the base with parchment paper.
- Melt the butter and chocolate together in a heatproof bowl using the microwave in 30-second bursts (or use a double boiler). Stir until smooth.
- Mix in the egg yolks one at a time until fully incorporated.
- In a separate bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the sugar and beat until stiff peaks hold.
- Fold a small amount of the egg whites into the chocolate mixture to lighten it, then gently fold in the rest in batches.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for 25–30 minutes, until the cake edges pull away slightly and the center looks set.
- Allow to cool completely in the pan before removing the ring.
- Whip the cream with powdered sugar and vanilla until soft peaks form. Serve each slice with whipped cream or fresh berries.
