Description

Cake:

  • 6 tablespoons salted butter (plus extra for greasing)
  • 8 ounces semisweet chocolate, finely chopped or chocolate chips
  • 6 large eggs, separated
  • 1/2 cup granulated sugar

Whipped Cream Topping:

  • 1 1/4 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the base with parchment paper.
  2. Melt the butter and chocolate together in a heatproof bowl using the microwave in 30-second bursts (or use a double boiler). Stir until smooth.
  3. Mix in the egg yolks one at a time until fully incorporated.
  4. In a separate bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the sugar and beat until stiff peaks hold.
  5. Fold a small amount of the egg whites into the chocolate mixture to lighten it, then gently fold in the rest in batches.
  6. Transfer the batter to the prepared pan and smooth the top.
  7. Bake for 25–30 minutes, until the cake edges pull away slightly and the center looks set.
  8. Allow to cool completely in the pan before removing the ring.
  9. Whip the cream with powdered sugar and vanilla until soft peaks form. Serve each slice with whipped cream or fresh berries.
