Ingredients

  • 2 gluten-free hamburger buns (Udi’s or Canyon Bakehouse)
  • 2 boneless, skinless chicken breasts
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 egg, beaten
  • 1/2 cup gluten-free breadcrumbs
  • Olive oil for frying
  • Lettuce, tomato, pickles (optional toppings)
  • 2 medium potatoes, cut into wedges
  • 1 tbsp cornstarch
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 425°F.
  2. Toss potato wedges with cornstarch, olive oil, and salt. Roast for 25–30 minutes, flipping halfway.
  3. Flatten chicken breasts slightly for even cooking. Season with paprika, garlic powder, salt, and pepper.
  4. Dip each chicken piece into the beaten egg, then coat with breadcrumbs.
  5. Heat olive oil in a skillet. Fry chicken for 4–5 minutes per side until golden brown and fully cooked.
  6. Lightly toast your gluten-free buns. Assemble sandwiches with toppings.
  7. Serve hot with your crispy roasted fries.

Notes

  • Make sure your breadcrumbs are labeled certified gluten-free.
  • Swap chicken for tofu for a vegetarian version.
